Help With: Onions!

I have a big bag of beautiful red onions in my pantry... normally we only buy a couple at a time. What kinds of things can I make with them? I don't want them to go to waste, so I'd appreciate suggestions...

    Try this one, I liked it:

    Tomato Basil Salad


    Ingredients

    * 6 (1/4 inch thick) slices tomato
    * 6 red onion slices
    * 2 tablespoons olive or vegetable oil
    * 4 teaspoons red wine vinegar
    * 2 tablespoons chopped fresh basil
    * 1 teaspoon sugar

    Directions

    1. Place tomatoes in a shallow dish; top each slice with an onion. In a small jar with tight-fitting lid, combine remaining ingredients; shake well. Pour over tomatoes and onions. Cover and refrigerate for at least 1 hour.


    Also, try Sierra City Camping Potatoes (Scott should remember this one...where we would like slits in the top of potatoes and inserting the onions in the slits before baking them. You can also try slathering garlic butter or simply butter/marg. around the outside of the tater before wrapping it in foil and baking).

  2. Oh yeah, and try them in Cucumber Salads too (with no cholesterol so good for you):

    * 2 cucumbers, peeled and thinly sliced
    * 1/2 red onion, thinly sliced
    * 1 1/2 cups water
    * 1/2 cup rice wine vinegar
    * 1 teaspoon white sugar
    * 1/4 teaspoon seasoning salt

    Directions

    1. Combine cucumbers and red onion in a salad bowl.
    2. In a small bowl, stir together water, rice wine vinegar, sugar, and seasoned salt. Pour over vegetables. Chill for 1 hour. Serve chilled or at room temperature.

    This is always great for summer.

Oooo Stephie, in regards to the Sierra City Mountain Taters mentioned above: Potatoes sliced across the top with red onions and butter inserted, a bit of garlic salt sprinkled on and then wrapped in foil OR instead of the garlic salt, bacon. Wrap in the foil, cook until done on the grill and when done, add shredded cheese and or sour cream. Yum!

  5. Sure! Why not? I know that there are various ways to fix the Sierra City Mountain Taters (as we called them). I am sure another method will be coming up soon as we are remembering more and more ways that we had fixed them.

  7. I often substitute red or Bermuda Onions for others...I just like the flavor better and they're such a pretty color besides! :o)
