Pear Au Bleu Pizza

Every so often, I need pizza...I NEED pizza.  Every so often, I NEED blue cheese...and boy, did I need me some blue cheese!  Thus, this solution was borne of complete glutenous desire.  Truth be told it's not really my fault; this desire for blue cheese.  It must be genetic.  My sister and I've got the bug and I know my cousin Charles is a complete Blauschimmelkäse Teufel (total fiend) and the rest of the family is highly suspect.  Last Thursday night this house was in need of comfort food, easy peasy comfort food and I had pizza dough.  Well, my dear friends and family, without further adieu, I give you...


Pear Au Bleu Pizza
(with apple wood bacon, caramelized onions and arugula)

4 strips Bacon (cooked and crumbled)  *I prefer thick cut apple wood bacon

1 pat Butter (optional)
1 Onion (chopped)
1 Trader Joe's Pizza Dough
4 tablespoons Pesto Sauce
1 tablespoon Garlic (minced)
6-8oz Mozzarella Cheese (shredded or grated)
4-6oz Blue Cheese (crumbled)
4-6 Bosc Pears (thinly sliced)

Arugula Lettuce


Cook bacon and drain excess grease off pan (wipe out dark bits but not completely); crumble bacon and set aside.  Melt butter optional. Caramelize chopped onions until clear and golden brown; pour off any excess liquid.

Take either purchased (or home made) pizza dough and stretch to a 12 inch flat round disc. Brush pesto sauce over pizza dough leaving approximately 1 inch bare edge.  Take half of the mozzarella cheese and combine with minced garlic; spread over the dough.  Add caramelized onions in thin layer on top. Thinly slice pears and layer in a circular pattern covering the pizza dough. Combine the remainder of the mozzarella cheese with 

Bake in 400' oven for 20-25 minutes or until dough is golden and cheese bubbly.

Place arugula in the center (pile) of pizza.  Cut and serve.

Wine suggestion: Rose or ?

  3. I just so happen to be sitting here wondering what I am going to do with two pear trees FULL of pears. Hmmm! I cannot wait to try it. Bleu Cheese and Pears ALWAYS go together great! Had it in a salad not too long ago and it was great. I have no idea why I never thought of it on the warmer side. Yum!
