Spicy Pasta Salad with Smoked Gouda, Tomatoes and Basil
Adapted from Ree Drummond's The Pioneer Woman Cooks

12 oz Mostaccioli Pasta

1/2 c Mayonnaise
1/4 c Half and Half
6 tbsp White Wine Vinegar
1/3 c Chipotle Salsa (Medium)
6-10 shakes Tabasco Sauce
1/2 tsp Salt
1/4 tsp Black Pepper
1/8 tsp Paprika
10 oz Cherry Tomatoes (quartered lengthwise)
1/2 lb Smoked Gouda Cheese (cut into small cubes)
30 whole Basil Leaves (chiffonade)

Cook pasta until done. While cooking, prep the tomatoes, cheese and basil and place in refrigerator until needed. Drain pasta, rinse in cold water until no longer hot and drain again. Set aside. Mix wet ingredients and whisk lightly. Add dry ingredients to wet mixture and whisk again. Add more salt and pepper or Tabasco if needed. Combine pasta, tomatoes, cheese and sauce mixture together. Add basil at the end. Refrigerate for a few hours before serving.
